Check Out Ernie Carrillo’s Story

Today we’d like to introduce you to Ernie Carrillo.

Hi Ernie, thanks for joining us today. We’d love for you to start by introducing yourself.
I was born and raised in San Diego, CA and have always loved food! Growing up, I knew that I wanted to become an entrepreneur in some capacity. Working in the restaurant industry was always a passion of mine, and it helped pay my way through college. After graduating from SDSU in 2004, an opportunity came along to bring a well known pizza recipe from the mid-west (Illinois & Iowa) to Chula Vista, CA. Joe & Ernie’s Pizzeria was born in 2005, and we recently celebrated our 15 year anniversary. Making pizzas and meeting new people is something that I still love to do after all these years.

We all face challenges, but looking back, would you describe it as a relatively smooth road?
Nothing about the restaurant business has been smooth. Joe & Ernie’s Pizzeria has had to navigate through a massive recession (2008) and now a global pandemic (2020). In addition, the pizza business is constantly evolving, so it’s been extremely important for us to be aware of our customers tastes and preferences and the restaurant industry as a whole. Thankfully, we have managed to survive through it all, which speaks volumes to our customer loyalty and product.

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
Joe & Ernie’s Pizzeria prides itself on providing excellent customer service and serving a delicious pizza that is made with the best ingredients and is consistent every time. We are best known for our signature sauce and dough, which combines to deliver a unique flavor with every bite. Our mission is to provide a wide variety of options such as vegan and gluten free so that everyone can enjoy the greatness of a fresh pizza!

So maybe we end on discussing what matters most to you and why?
Two things stand out the most. First, our ability to offer various menu options to our customers is very important. It has always been a goal of Joe & Ernie’s Pizzeria to be a place where everyone can come in and order a pizza no matter if you were vegan, vegetarian, or had a gluten allergy. It brings me great satisfaction when a family can come in and order different types of pizza for everyone in their family. Second, developing a sense of community is probably most important to me. Over the past 15 years, I have developed lots of great relationships with many of my customers. It has been a privilege to watch many young customers grow up in front of my eyes, only to continue to be loyal customers has they have become adults.
