Hidden Gems: Meet Roxana Pavel of Allmine

Today we’d like to introduce you to Roxana Pavel.  

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
Allmine ( is an inviting hang-out place, where locals and tourists alike can enjoy California coastal cuisine made with locally sourced ingredients, fresh traditional PIZZA, fun craft beer selections, and an all-natural wine menu. We are also committed to having an all-inclusive and kind environment, and we prioritize self-care and a work-life balance. The focus is on having fun in a positive atmosphere while giving great service. We conduct business in an ethical way while we respect and support each other, our craft, our purveyors, and our guests. 

I am very lucky to have found a great team of talented and supportive individuals who bought into the idea… Hospitality is all I know… from my family, my education, my experience… I have learned from both independent owners and corporate venues, chef-owned restaurants, etc… I am grateful to all my mentors and my former employers and employees for shaping me … I am the product of all my past experiences, and all of that brought me here today… 

I wanted to create a space where my guests, my team, and myself feel welcomed and happy. A space that would be part of a community and that could give back to the community not only through the experience we offer here but by employing local talent and working with local purveyors, farmers, brewers, and artists. A business that I would have control of, where I could express my creativity. 

I wanted to challenge myself… I have learned so much in the hospitality industry, I knew I can improve on things if it was my own business. With the right team, we can get creative, focus on quality, and pay attention to details… 

I wanted freedom… From the freedom of waking up whenever U want, to the freedom of creating whatever we want, without the boundaries of rules and red tape, just focusing on delivering something cool, new, and of quality for the community. 

We all face challenges, but looking back, would you describe it as a relatively smooth road?
To be honest, it has been a very smooth road… and it all came together rather quickly… I firmly believe that if you find the right people, the right team, everything comes together easily. 

Alright, so let’s switch gears a bit and talk business. What should we know?
We make really good pizza… it’s what our customers say… We make our own dough and use a three-day fermentation process that allows it to mature and become a light and crispy pillow covered in the best and freshest ingredients… We use San Marzano tomatoes to make our sauce and make everything that we can from scratch, all of our sauces, dressings, sausage, and even our burrata cheese. We love making desserts, and those are too made from scratch, a manageable size and low in sugar. 

As far as our beverage program, we sell exclusively natural wines. We support producers who farm and process their wines responsibly without any additives. We focus on small producers who work out of love for their craft, organic, biodynamic, and natural wines, as well as female winemakers, both local and imported. 

All of our beers, both draft, and cans, are craft and local — sourced from breweries around town and North County… 

Can you talk to us a bit about happiness and what makes you happy?
Seeing my customers happy, having a good time, whether they’re here for a pizza, a beer, or a good bottle of wine… For whatever reason, I am happy when they find a space where they can relax and enjoy themselves and just feel at home.
