Meet Abraham Kesablyan of FireBirds Chicken

Today we’d like to introduce you to Abraham Kesablyan.

Hi Abraham, please kick things off for us with an introduction to yourself and your story.
Abe Kesablyan was a 19 year old university student at UCSD when he came up with the idea to open up FireBirds Chicken. Fast forward a year later, Abe turned his idea into reality. Abe opened up the first FireBirds Chicken in his senior year of college. While trying to balance school and a brand new restaurant, Abe faced a bunch of challenges which then turned into learning curves which made FireBirds Chicken #2 (National City) a possibility. Abe was later joined by his brother George and together they became the ultimate duo with hopes of expanding FireBirds Chicken into a nationwide brand. Along the way Abe and George formed an awesome team consisting of dedicated employees and managers to  deliver each location the way FireBirds was meant to be. FireBirds chicken has a goal of opening 1 or 2 more locations this year and at least 5 locations by the end of next year.

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
Some struggles we encountered on this journey was how to manage the trial and error that created is the flavors we have today, it was this struggle to find the best ingredients to accomplish this, but it is what helped us grow through a world wide pandemic

As you know, we’re big fans of FireBirds Chicken. For our readers who might not be as familiar what can you tell them about the brand?
FireBirds Chicken specializes in Fast Casual Fried Chicken. At FireBirds, we take one piece of chicken (tender) and we turn that one thing into a whole menu, making three different sandwiches, loaded fries, mac and cheese, and a bunch of speciality menu items. We are known for our famous Big Ol Sandwich, which contains coleslaw, pickles, two giant chicken tenders, cheese sauce, and our signature house-made fire sauce, all between soft kings Hawaiian buns.

What sets us apart from other chicken spots is our signature menu items made with different house-crafted sauces. Although our menu is so simple, the flavors that come across a person’s tastebuds are very complex. Brand wise, we are most proud of the name we created through FireBirds Chicken, making it known across all of San Diego through our marketing and flavors that have been offered. The shockwave of love we have received all throughout San Diego is the reason that we bring FireBirds closer to different parts of San Diego. Opening our second location in National City made us realize that we can take FireBirds anywhere and provide unilateral quality no matter where we are.

The crisis has affected us all in different ways. How has it affected you and any important lessons or epiphanies you can share with us?
The most important lesson we have learned during Covid-19 is to make sure we are always doing our part to keep our communities safe and clean, provide access to resources and be able to give back to those in need because just like the greatest chicken sandwich, surviving through a pandemic has its own recipe to success.
