Today we’d like to introduce you to Alexis Wells.
Alexis, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I have wanted to be a pastry chef since I was four, I have received my bachelors and associates in baking and pastry and Culinary Managment! I also work as a pastry cook 2 at Omni La Costa assisting in supplying fine desserts to every aspect of Omni La Costa spa and resort under executive pastry chef Keith Wallace. I am constantly working hard to improve my skills by practicing for ACF Competitions, I have competed in roughly 15 competitions placing or medaling in almost all of my competitions to improve my skills, my next pastry competition is scheduled for October 2017 in Columbus Ohio! Also, I work alongside Amaya Images for her smash cake sessions for kids and dogs, it’s a fun session that involves a 6in custom cake!
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
So far I have had a really smooth road, I independently moved to San Diego from Anchorage Alaska for my first time on my own to attend culinary school at The Art Institute of San Diego, graduating and able to continue to live in San Diego by using my faith passion and hard work to pull me through every culinary journey! Although there are 18 hours working and practicing days pretty frequently I wouldn’t trade it for the world as each day I’m learning something new and improving my skills!
Dessertsbyalexis – what should we know? What do you guys do best? What sets you apart from the competition?
I make custom cakes and desserts for friends, family and smash sessions, what I make the most of is smash cakes for kids, parents love these cakes because it’s a small delicious cake that I customize to their theme. I feel like this since I am an independent company I have more freedom to say YES! To any crazy idea, someone has for a dessert or cake idea!
What is “success” or “successful” for you?
Success is hard work and opportunities, success is something that is never finished, We work hard to succeed at one level but there is always another level, we work hard to get the next opportunity to help us achieve more success! I got my first tattoo and it says faith, passion, hard work and I know that these three attributes will lead me to my next opportunity to keep achieving success!
