Meet Alicia Phoenix of The Crimson Cake

Today we’d like to introduce you to Alicia Phoenix.

Alicia, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
In 2010, I was working as the Assistant Pastry Chef at Four Seasons Aviara in Carlsbad and doing custom cakes on the side for fun. When the hotel changed ownership in late 2010, I decided to venture into my own cake business – The Crimson Cake.

The Crimson Cake began as a business partnership with my sister, Sarah. Between 2010 – 2016 we worked in various commercial rental kitchens, shop fronts and employed several employees. As our families changed, our business transformed. Today, The Crimson Cake is a (mostly) one-woman operation. I am based out of Oceanside Commercial Kitchen and decorate from my own cake studio at that location.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Running a small custom cake/dessert business requires a lot of hours and hard work regardless of location. Our journey had the added struggle of working from rental kitchens and needing to work with others’ schedules/limitations to be able to do our work. Currently, The Crimson Cake works from Oceanside Commercial Kitchen with a cake studio at that location – at last everything is one space!

The Crimson Cake – what should we know? What do you guys do best? What sets you apart from the competition?
The Crimson Cake bakes everything from scratch using European recipes for everything from profiteroles to buttercream. We make custom cakes, cupcakes, cake pops, French macaron and other assorted mini pastries. The high-end recipes coupled with an eye for detail results in a product that my customers happily comment on – ‘it looks as good as it tastes’ … when usually it is one or the other.

What is “success” or “successful” for you?
If you do what you love and love what you do and are able to bring smiles to the faces of your customers – you have succeeded!

    Alicia is the hardest and most conscientious worker you will ever meet. Her artistic abilities, her creativity and her willingness to always try something new is refreshing and praise-worthy. Her cakes are out of this world, but it is the person who I really admire!
