Meet Brendan Pappas of Kayak Kafe in On the coast, in Historic Savannah, GA

Today we’d like to introduce you to Brendan Pappas.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
We have been serving the Savannah area for almost 12 years. We started at our Downtown location back in January of 2006 and have since evolved into one of the best healthy cafes in Savannah, GA with two locations. I started working in restaurants when I was very young and have since logged 30 years of experience in the restaurant business- which makes me sound really old! I graduated from the University of Georgia in 1999 with a Journalism Degree then realized that my heart was still in the hospitality business. I lived in New York City for many years, bartending at some of the city’s best Nightclubs until I decided I wanted to own a restaurant of my own. My business partner Mallie and I found a small café with a great location for sale in Savannah. The café was open for lunch only, served smoothies and light bites and was struggling to keep it’s doors open. We expanded the menu to include some great lunch options and ultimately opened for dinner, expanding the menu yet again. We now offer a variety of affordable, healthy, fast casual choices that are great for lunch or dinner and have since opened another location in the Medical district of Savannah. We are currently working on opening additional locations in the Southeast.

Has it been a smooth road?
Nothing in the restaurant business is smooth, if anything you hope for controlled chaos. It has been an interesting road for sure and I have enjoyed the experience- I also wouldn’t recommend it

We’d love to hear more about your business.
Kayak Kafé is known for healthy choices, from tasty tacos to great salads to creative Vegan and Vegetarian entrees. We have something for every dietary style. We source our ingredients carefully and serve only quality proteins, produce and the rest. Year after year, we are consistently voted Best Salads and Best Vegetarian Food in Savannah.

Is our city a good place to do what you do?
I love the ever-burgeoning food scene of Atlanta, cliché alert: hate the traffic! If you mean Savannah, I love the Colonial Architecture of Savannah, it’s truly a beautiful city, and again, the expanding food scene is very exciting. But like any other small Southern town, Savannah still has a long way to go in battling poverty and crime.
