Meet Diana Benedek of 2GOOD2B Bakery & Cafe

Today we’d like to introduce you to Diana Benedek.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
I was diagnosed with fibromyalgia and over the years found out that I was not only allergic to gluten, but I was also intolerant to corn, soy and pretty much all grains except for rice and I only felt better once I removed all ingredients from my diet.

2GOOD2B was founded because I was frustrated that the only gluten free food I could get was full of corn, sorghum, millet or soy and tasted like sand paper. And, wherever I went to eat outside of my home I got sick because of cross-contamination. Now my family, our customers and I have a 100% dedicated place that I call my Safe Haven.

I hope to open more cafes through franchising so that we can influence and help even more people with food allergies and the ones that do not know they can be cured by simply cutting the allergens in their food.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
The restaurant business is a very difficult one but in addition to it I was targeting a small percentage of the population. To avoid being only a specialty shop, I did not add 2GOOD2B Gluten free to my logo, only 2GOOD2B and our cafes are beautifully decorated and our bakery case is full of beautiful desserts so we do not look not taste like a gluten free place. We succeeded since 50% of our customers are not gluten-free

The food costs are very high since we only buy the best and our flours only from gluten free dedicated mills. Because we do not tolerate any corn, it also means that we do not tolerate any corn syrup, any preservatives any MSGs and bottom line our food is pure. Since we are in North America where all food comes full of chemicals, we end up making all our food from scratch, grate our own cheeses, make our own sauces, salad dressings and brines and pretty much cook like our grandmother used to. This means that not only our food costs are high but also our manpower is very high.

This means that in all these years I am still investing into the business, but it is totally worthwhile every time someone lets us know how we have changed their health, I even have case stories where we took a client out of her wheel chair or a child starring in class when she could not keep up a year before. It is hard but so worthwhile!

Please tell us about 2GOOD2B Bakery & Cafe.
Our first mission is to help people with food allergies to feel normal again by eating delicious food in a beautiful, 100% dedicated place, where they can eat safely and feel at home. To our knowledge, this does not exist anywhere else. Our customers who seek gluten-free food are always surprised that our food tastes better than food containing gluten. The fact that 50% of our customers are not gluten-free is a proof that our food is gluten free without compromise. And because we have been able to offer superior quality, texture and taste while being gluten, corn and soy-free, we call ourselves 2GOOD2B.

The number of persons that understand that their disease is related to eating gluten is increasing every day. We are beyond only people with Celiac eating gluten-free. Now they are associating gluten intolerance to over 240 diseases. Children with developmental problems, autism, ADHD, bi-polar and intestinal problems are being treated by removing gluten from their diet. Cancers, self-immune diseases, Crone’s disease, arthritis, thyroid problems like Hashimoto and others like Fibromyalgia (like me) are finally being associated with eating gluten. The list is huge and getting larger every day. We always said we are what we eat, but now more than ever we are proving it.

As I was not getting better by just removing gluten from my diet, I have researched and found that scientists are finding out that corn has as large fraction of Zein, a gluten-type protein that many are also allergic to. Research is also showing that many that are allergic to gluten are also allergic to Soy. Removing all 3 from my diet was my answer and some are finding the same. And when the world finalizes realizes that eating gluten-free alone is not enough to cure them, 2GOOD2B will be there for them, meanwhile; enjoy the pleasure of eating really good, GMO-free healthy food.

We are asked all the time when we are going to expand. As my mission is to help as many people as possible and as fast as possible, we are currently looking at franchising 2GOOD2B. Do you look back particularly fondly on any memories from childhood?
I travelled a lot when I was young and my favorite times meeting my family. My family is dispersed in Brazil, Portugal and France and meeting them one by one over the years was my favorite memory
