Meet Eric Myers of Lofty Coffee in Encinitas, Solana Beach and Little Italy

Today we’d like to introduce you to Eric Myers.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Lofty opened in 2011 as a corner cafe on the coast highway in Encinitas. In the beginning, we sourced our roasted coffee and pastries from the best local producers and prepared our breakfast and lunch items from scratch. We soon realized that we wanted full control of our products to create the best experience for our guest, so we decided to become coffee roasters, scratch bakers and a cafe operator. In 2014 we opened our Roastery and scratch bakery in Encinitas.

With this facility, we roast our coffee’s, bake all of our pastries and make all of the ingredients for our breakfast and lunch menus from scratch. We opened our Solana Beach cafe in 2015 and in 2017 we opened our Little Italy cafe and scratch bakery. Our flagship in Little Italy is supplied with freshly roasted coffee from our Encinitas Roastery but it has its own scratch bakery and kitchen on site that makes all of our pastries and menu items from scratch for the cafe.

The journey has been amazing and we continue to look for neighborhoods that lofty will be a part of while maintaining our vision of being a community gathering spot where our guest can gather and enjoy the highest quality food and drink.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
We have been very fortunate in how our communities have received us and for that, we are always grateful. We set out to create the best cafe experience possible for our guest and we feel we have achieved that. With that has come many challenges and long days, weeks and years of product development, cafe design and creating a company culture of truly caring for our guest.

Along with those goals we have strived to create an environmentally sustainable business and a rewarding and sustainable work environment for our team. Which isn’t easy in an industry with escalating cost across the board. We continue to be guided by our ethos to achieve these goals.

So, as you know, we’re impressed with Lofty Coffee Co. – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
Lofty is a coffee roaster sourcing direct trade coffees from around the world to share with our guest. Lofty is a scratch baker making all of our pastries in-house from scratch using the finest quality organic and natural ingredients.

Lofty is a cafe operator serving a culinary display of coffee, tea, breakfast and lunch offerings. We source local, organic and natural goods for everything we offer.

Our coffee is meticulously sourced and roasted to showcase the amazing work that farmers around the world produce. Our whole bean coffee is offered in all of our stores as well as local markets including Wholefoods, Lazy Acres, Seaside Market and Jensens.

We are equally known for our approach to sourcing and roasting coffee as well as our fresh baked goods and our fresh locally sourced organic food menu.

So, what’s next? Any big plans?
We hope to grow into a few more of the awesome neighborhoods in San Diego and then if its sustainable as a business we will look to move north.
