Meet Hanis Cavin of Carnitas Snack Shack and The Pioneer BBq

Today we’d like to introduce you to Hanis Cavin.

Hanis, can you briefly walk us through your story – how you started and how you got to where you are today.
I got my first taste of cooking at La Quinta PGA West. from there I went to the New England Culinary Institute. Spent an amazing season on Nantucket! Fell even more in love with cooking. Came back to San Diego and started my culinary career. I was blessed to work under chefs like Debra Helm, Stephane Voitzwinkler and Max Bonacci. I had the wonderful opportunity to work with Tracy Borkum at Kensington Grill. KG is where I was working when I won Chef of the year in 2009

I am currently the founder-culinary director of Carnitas’ Snack Shack. I have just recently opened The Pioneer BBq as chef – founder. My career is still unfolding, stay tuned for more. 🙂

Has it been a smooth road?
Being a chef means that there are always obstacles. From excessive wear and tear on the body, the after-work life and of course the owner to chef conflicts.

Some of the struggles have been burnout, overconfidence that has led to being fired….. won’t go into that! Trying every day to push yourself and stay ahead of the bloggers and critics is the most real struggles of being a chef today.

So, as you know, we’re impressed with Carnitas Snack Shack  and The Pioneer BBq – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
I have a pork-centric fast casual restaurant and now a BBq and burgers. I specialize in pork and meat! I am known for the many variations of pork cookery. Also for being loud!

I am most proud of my company for its dedication to giving back to the community through many local charities

What sets me apart is that I still cook with my staff, still help out on as many charity events and do my best to support other restaurants and promote this wonderful city we call home.

Let’s touch on your thoughts about our city – what do you like the most and least?
I like best that I was born and raised in San Diego. It’s the best place to live in the country. I truly love the ocean.

I least like the lack of our citizens not fighting for the homelessness problem
