Today we’d like to introduce you to Joseph Karadakis and Eitan Margolis.
Thanks for sharing your story with us Joseph and Eitan. So, let’s start at the beginning and we can move on from there.
It all started with a passion for the Great American Grilled Cheese Sandwich and a Food Truck… and experimenting with multiple flavors of cheesy goodness and the next generation of Artisan Sandwiches started rolling off the grill. Choose from over 10 delicious Chef Creations or build your own. We also offer a nice selection of Grater burgers, Pommes Frittes (Grater Cheese French Fries) and Mac and Cheese. Our slogan: “Making the World a Grater place, one grilled cheese at a time.” Think it’s as good as Mom’s ?— we think so, maybe better! But please don’t tell Mom. A couple of years after we opened our first “test” brick and mortar in La Jolla, and shortly after that the rest of the locations started popping up! We went to Mission Valley, Del Mar and eventually a bit outside San Diego to our friendly neighbors in the north, Orange County! Grater Grilled Cheese always likes experimenting and that is what makes us different. We don’t just do grilled cheese, we use this American comfort classic as a vessel to some of our craziest recipes, like the Nashville Hot Grilled Cheese, or the Maui Wowie Grilled Cheese.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
We walk the path less traveled so we have had a few bumps along the road. There was a learning curve when transferring from Food Truck to brick and mortar. We originated from a pretty old school team and now are making our way to our customer’s hearts by using the latest technology both while making the food and while designing the guest experience in one of our restaurants. We take pride in our past, we learn from it and move forward to the future with a very forward and open mind.
Please tell us about Grater Grilled Cheese.
We specialize in Grilled Cheese sandwiches. There is so much potential in the mouthwatering blend of natural unprocessed cheeses inside two slices of bread toasted in delicious butter! Dunk that in a cup of our signature Tomato Basil Bisque and you got a winner!
We use that “Basic5 Grilled Cheese” (named after the 5 cheeses we use) as a base for all of our creations and we are not afraid to get crazy with it!
Our most popular item since we opened is the Lobster Grilled Cheese. Butter fried lobster and krab with garlic and chilly flakes with our Pale Ale Beer Chipotle Aioli. Very close next would be the Philly Grilled Cheese which is thinly sliced and seasoned sirloin steak with balsamic caramelized onions and bell peppers. We let the customer choose which aioli to include but we always recommend our Roasted Garlic Aioli!
As a company, we are most proud to be involved in our respective communities and helping out and supporting in every way we can. We believe that the support of local youth is important so we sponsor local sports clubs and high schools.
Do you look back particularly fondly on any memories from childhood?
Waking up on a Sunday morning by the smells of my mother cooking in the kitchen for the weekly family Sunday gathering. I also have a very vivid memory of my grandmother making phyllo dough for pies with her delicate hands.
