Meet Kristine Guerrero of Eat Your Cake Too in Escondido

Today we’d like to introduce you to Kristine Guerrero.

Kristine, can you briefly walk us through your story – how you started and how you got to where you are today.
As I was growing up, my mom started learning the art of cake decorating. Just from being around it so much, I started to pick it up as well. But, I had a different path in mind.

I went to college with the idea of becoming a doctor but quickly realized that I didn’t want to spend so much of my life in school. So, I worked in science after I graduated but always felt like there was something more for me out there.

I continued to learn and practice my baking and decorating skills on the side and would get more an more opportunities as time went on.

Through a series of unfortunate yet fortunate events, I found myself at a crossroad, following my pastor, following my heart. My heart won and I changed the course of my life using my science background to create the best tasting wedding cakes I could. Everything I make is my own recipe, from scratch using the best ingredients, because they make the best cakes!

My commitment is to solve the age-old adage that wedding cakes look great on the outside but lack on the inside. I aim to deliver high-quality cakes that look superb, bring delight to the customer, and make special celebrations a moment to cherish!

As of yet, I am a one-woman show. I am licensed to work out of my home, so everything I make is custom made to order, specializing in wedding cakes. I am personally involved in the design and creation of every cake that I make, from planning and design to baking and construction, decoration and delivery. I feel that cake should be a reflection of you!

We’re always bombarded by how great it is to pursue your passion, etc. – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
I jumped into this not knowing anything about running a business. I had a lot to learn… web design, marketing, accounting, photography, you name it. I thought that I had to know it all before I officially launched my business. I eventually decided that I needed to jump right in and see where it would take me.

Finding the right balance between my family life and my work life was difficult at first. I have 3 young children that still require a lot of my attention. At first, it put quite a strain on my family life. As I learned to better manage my time, I’ve been better able to find this balance.

So let’s switch gears a bit and go into the Eat your cake too story. Tell us more about the business.
I named my company ‘Eat your cake too’ because I wanted the inside of the cakes I created to be just as memorable as the outside. I had heard time and time again about poor tasting cakes, weddings in particular, from comments such as “if it looks like cornbread, it tastes like cornbread” and “My wedding cake was beautiful but I didn’t touch a piece of it because I hate fondant!”. I thought this shouldn’t be the way it is.

Now I know that not all wedding and custom decorated cakes are this way, but I still hear this same thing all too often. This is why I spent months perfecting my recipes. I used my background in science to really understand ingredients and their purposes in baking. These recipes are my own. I bake from scratch, not from pre-made mixes.

I continue to explore flavors and ingredients that will set my cakes apart from others. I have also become very interested in more natural plant-based ingredients and am working on recipes for those with special dietary needs and preferences.

As much as I have focused on the inside of the cake, I dedicate to the outside. Experience has made me a better decorator and I am continually exploring new techniques and mediums to add beauty to my cakes. I love working with my clients to design a cake that reflects their vision for their celebration, whether it’s a wedding or special occasion. After all, it’s a piece of art, a delicious and tasty piece of art.

Has luck played a meaningful role in your life and business?
Personally, I do not believe in “luck”. I believe in hard work and I believe in divine intervention. I am a firm believer that there is a higher power that leads and guides us, but we have to put in the work.

I also believe that there is a reason for everything. If something happens, we have to roll with it, not fight against it. Having a plan is important but being flexible is even more important.

I have been blessed to have some amazing people put into my path. The people I have met and had the pleasure of working with have been great! It never ceases to amaze me the kindness that is extended to me from other vendors in this industry. I just hope to be able to pay it forward to someone who is just starting out like I was.
