Meet Nicole Estrada of Fresh Creations in Escondido/San Diego County

Today we’d like to introduce you to Nicole Estrada.

Nicole, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I’m a corporate professional turned chef! In 2017, while on maternity leave with my second son, my mother passed away after battling four cancers in five years. As a mother of two incredible toddlers, it’s extremely important for me to promote a clean and healthy lifestyle. For years, I showed my love for others through clean, nutritious food. I knew I wanted to take this one step further, so I took a leap of faith and resigned from my corporate job of 14 years and enrolled in culinary school. A year and a half later, I opened Fresh Creations —a personal chef and catering services company based in beautiful San Diego, California.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Launching Fresh Creations has been challenging. I’ve had several obstacles along the way, from finding a commissary kitchen to obtaining the required licenses and permits to managing the daily business. There have been days where I’ve wanted to give up, to go back to my corporate lifestyle that was comfortable and familiar. However, the support of my family and friends, as well as encouragement and positive feedback from my clients, has been priceless. It’s what keeps me motivated and determined to make this business successful.

Fresh Creations – what should we know? What do you guys do best? What sets you apart from the competition?
Fresh Creations is a Personal Chef & Catering Services company that focuses on health-conscious food with quality and flavor at the forefront of every meal we create. We specialize in using wholesome, organic, fresh and locally sourced seasonal ingredients. We are proud to shop local and support local organic farms building a relationship with farmers to ensure our clients are provided with the very best ingredients. We offer a wide range of services including a weekly meal delivery service, cooking classes for kids and adults and catering intimate events.

What is “success” or “successful” for you?
Ultimately, I think success equals happiness but it’s not as easy as it sounds. I have several ways of defining success for myself and Fresh Creations. From a personal standpoint, finding the right work-life balance is extremely important to me. Being there for my family, ensuring I spend good, quality time with them is critical. From a business standpoint, being successful will depend on forming good relationships with my clients and vendors. Retaining customers, continuing to focus on community involvement and providing San Diego residents with healing, nutritious and healthy food will be the critical markers I aim to achieve.


  • Entrees for our meal delivery service are $14.00 each. We offer vegan, vegetarian and flexitarian options.
  • Breakfast Add-Ons are priced around $6.00
  • Lunch Add-Ons are priced around $8.00.
  • Cooking classes range from $25+ for kids and $50.00+ for adults.
