Meet Tracy Bischop of Cakerella Creations in Murrieta

Today we’d like to introduce you to Tracy Bischop.

Tracy, please share your story with us. How did you get to where you are today?
Cakerella Creations came about after frustratingly trying to find a bakery that created not only amazing looking cakes but amazing tasting cakes. I had moved to Murrieta, Ca from San Diego shortly before the birth of my first child. When her first birthday rolled around, and I had not found a bakery I truly enjoyed, I decided to dabble in cake decorating and created her smash cake and the desserts for all of my party guests. I had always loved baking with my grandma, though I had never made a fancy cake before. It was a success, and everyone raved about the taste! I started baking weekly and tweaking recipes constantly. During this time, I also found myself making cakes, cupcakes, and cookies for some of my friends and family members to help them celebrate with something delicious. Eventually, I realized I had found my passion and I was good at it. So, I jumped through all of the hoops and Cakerella Creations became a licensed home bakery business in April 2015. Today, I continue to perfect my craft and am working towards opening a storefront in the next couple of years.

Has it been a smooth road?
There was a huge learning curve, and I am still constantly learning both new decorating techniques as well as new business techniques. Though I was already a good baker, I had next to zero decorating experience. I had to learn everything from the lingo to the different types of icing to basics like how to stack and fill a cake properly. I initially started out thinking I’d only offer cakes and cupcakes but by a year in I found myself offering just about every treat you could imagine–cake pops, decorated sugar cookies, french macarons, Rice Krispies treats, chocolate dipped Oreos, etc. As clients asked for things, I would say yes and then teach myself how to create what they were looking for. I spent a lot of time on YouTube and Pinterest. Eventually, I realized I needed to trim down my menu and start focusing on the things I really wanted to create. So, in 2018, I started to turn down orders that weren’t in line with my business plan.

Decorating and baking is really only part of the equation though. What I had never stopped to think about was that I opened a business and I had no idea how to run a business. 2018 was definitely a year of growth for me. I spent the better part of the year learning how to become a CEO and learn all the ends and outs of running a business. Learning how important all the different numbers are in your business (expenses, overhead, etc.) and that you really need to know how to track absolutely everything was a huge turning point. That was probably my biggest challenge, other than learning how important it was to properly stack and support a tiered cake.

So let’s switch gears a bit and go into the Cakerella Creations story. Tell us more about the business.
Here at Cakerella Creations, everything we make is made from scratch and baked with love. I take great pride in the fact that my products don’t only look great but taste incredibly delicious. I take a very limited number of orders every week to ensure the highest quality products are delivered to my clients.

As a child and into my early adult years, I never enjoyed buttercream icing. It always seemed overly sweet, and I especially didn’t like when it got crunchy. So, once I started creating recipes, my buttercream icing was the first thing I worked out. After months of tweaking, I finally created a buttercream icing that is absolutely delicious, it’s not overly sweet and has the most luxurious texture. This is one of the things my clients rave about, and it definitely sets me apart from the other bakeries.

Since my signature buttercream is so popular, I mainly create buttercream cake designs and only add fondant details. I love the rustic, whimsical look of a buttercream cake. I especially enjoy hand painting on a cake. I have recently started doing more wedding cakes and I love knowing the newlyweds and all their guests will be finishing the night enjoying one of my creations.

How do you think the industry will change over the next decade?
Being in the cake industry is kind of like living in a whirlwind. There are always new decorating and flavor trends. I love that about this industry–nothing ever stays stagnate.

The advent of Social Media has really influenced the cake industry. Everyone wants things that are over the top and that make a good Instagram picture. 2018 was the year of the cream tart letter and number cakes. I did a large number of these myself and even did a presentation at the 2018 San Diego Fair on how these are made, but I have seen a sharp decline in these in the last few months. It will be interesting to see what the hot trend is for 2019.

I do think in the next few years over the top cakes will peak and then we will see a trend towards more rustic, simply styled cakes.
