Rising Stars: Meet Zachary Lynch

Today we’d like to introduce you to Zachary Lynch.

Hi Zachary, please kick things off for us with an introduction to yourself and your story.
My partner and I have always wanted to own a business, but we never knew were to start. When the COVID-19 pandemic started, we had a great stable jobs that were thriving as a result of the pandemic. One day, one of my partner’s long-time clients, a restaurant owner, asked him if he knew anyone who would be interested in buying his restaurant – a traditional Japanese Sushi establishment in the heart of North Park. My partner immediately called and asked if I’d be interested – but who would be in these times? I was hesitant at first until we walked inside the restaurant.

The moment I got to see the facility and felt the warmth of the location, I wanted to quit my job immediately. We left unsure about what to do next, afraid of making the wrong decision. At last, we decided to go for it. No one in their right mind would buy a restaurant during the second peak of the pandemic, but we knew that it was a lifetime opportunity and that it would be a risk, but we also knew that we were prepared and ready to work the hardest we have ever worked in our lives! And here we are six months later: we purchased the restaurant, converted the menu into a Mexican Japanese fusion, we serve sushi rolls with Mexican-inspired flavors, and we are working very hard to bring a completely different and new concept to this amazing community!

We all face challenges, but looking back would you describe it as a relatively smooth road?
Definitely not. To start, we reopened under the same name. That generated some confusion for previous customers. Some would leave mad after finding out that the menu had changed and others converted to being our customers and they love our food. Our concept is different, so another challenge is educating people about what we offer. Lastly, opening in the middle of a pandemic brought some challenges as well!

Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
We serve Mexican-inspired sushi rolls! We have Aguachile Rolls, Chipotle Marinated Shrimp Rolls and more! We have a wide variety of appetizers and fried rolls as well. Our rolls are like what one would find at a typical Japanese Sushi restaurant here in the US (cream cheese, crab, cucumber and other typical fillings inside), but our toppings tend to have Mexican flavors such as guajillo, poblano, chipotle, etc. The intricate flavors in our sauces definitely set us apart from all other restaurants.
