Hi Kelvin, so excited to have you with us today. What can you tell us about your story?
From Sligo to San Diego: The Journey Behind Crafted Coupe
I grew up on the west coast of Ireland, in the small town of Sligo. After finishing school at 21, I took my first trip to San Diego—and quickly fell in love with the city. Though it was a short stay, it left a lasting impression. I returned to Ireland to regroup and plan my next move, which brought me to New York City. What was meant to be a few weeks turned into nearly eight years, during which I immersed myself in the hospitality world, running bars across the city.
It was during that time in New York that I met my amazing wife. Then, like for many, the pandemic shifted everything. We found out we were expecting our daughter—our joyful, energetic Indigo—and began to reevaluate our timeline. We had always planned to eventually move to San Diego, but with NYC at a standstill, we decided it was time. We packed up our life, our animals, and our four-month-old baby, and drove across the country to start fresh on the West Coast.
Once in San Diego, I began helping friends at their bar, Bar One in Little Italy, while quietly building toward a place of our own. That opportunity came in mid-2023. We found a space that felt like the perfect fit, and hit the ground running. I partnered with two close friends—Joe Bennett and Michael Hanley—and together we brought Crafted Coupe to life.
Crafted Coupe is a cocktail bar rooted in creativity and community. We serve uniquely crafted drinks in a relaxed, welcoming atmosphere designed to spark conversation and connection. It’s more than just a bar—it’s a place for people to gather, share ideas, and feel a part of something. And as they say, the rest is history.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
One of the biggest challenges has been getting the word out about Crafted Coupe while also protecting the integrity of what we’re building. When you pour your heart into something—from the cocktails to the space itself—it starts to feel like a part of your family. It’s a strange balance: you want people to discover it, to love it, to make it their own—but at the same time, there’s this instinct to shield it, to make sure the experience stays true to the vision we had from day one.
It’s also a whole different experience when the bar is yours—not just one you’re managing for someone else. Every decision, every detail, every challenge hits differently. There’s a deeper level of responsibility, of emotional investment. It’s not just about the bottom line—it’s about the people who walk through the door, the team you build, and the atmosphere you work so hard to create every single day. You’re not just running a bar—you’re building something personal and lasting, and that comes with a unique kind of pressure and pride.

First and foremost—be patient, stay curious, and never stop learning. The bar industry can be one of the most rewarding spaces to grow in, but it takes time to really understand the layers behind the bar: the flavors, the people, the pace, and the culture.
Start by mastering the basics and being the kind of teammate others want to work with. Hospitality is everything—it’s not just about how well you make a drink, but how you make people feel. Some of the most successful people in this business got there by being humble, consistent, and hungry to improve, even when no one was watching.
Also, don’t chase titles—chase experiences. Work in different types of venues, learn from different people, and try to understand every corner of the operation. The more well-rounded you become, the more valuable—and grounded—you’ll be when you’re ready to lead or create something of your own.
And when the day comes where you do open your own place—know that it’s a whole different ballgame. It’s beautiful and exhausting. You care about everything, down to the ice cube, because it’s yours. So be ready for that weight—and also for the pride that comes with building something that reflects who you are and what you believe in.
This industry can take you around the world, introduce you to lifelong friends, and teach you more about people than most books ever could. Just stay true to your values, treat every guest like they matter, and always remember why you started.
