Today we’d like to introduce you to Romeo.
Hi Romeo, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
After over 20 years in the culinary industry, I have cultivated a deep passion for food, creativity, and leadership. My journey began at a local Italian restaurant named Birraporretis where I started as a dishwasher\Expo As I worked my way up through the kitchen ranks, I honed my skills and got a job at Peohes and Yokozunas and learned sushi preparation as well as French, Italian and Asian cuisines, shortly after i recieved jobs at Roy’s, the W hotel and SkyRoom kitchen T La Valencia Hotel and ultimately leading to my role as a head chef.
It led me to open my own catering business named KeahiKai Sushi and grill where we do assortments of sushi, yakitori, ramen and other specialties.
Currently, I serve as a Sous Chef at Sycuan Casino, where I oversee a large team and develop menus that highlight fresh, seasonal ingredients. My experience has allowed me to innovate recipes, enhance customer experiences, and maintain the highest standards of food quality and safety.
I am grateful for the challenges and triumphs that have shaped my career, and I remain dedicated to delivering exceptional culinary experiences every day.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
It was not a smooth road, lots of charting through turbulence. Its where I learned how to be a man of grit. At one point I was rock bottom dealing with homelessness.
We’ve been impressed with Keahi Kai Sushi and Grill, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
At Keahi & Kai Sushi and Grill, our mission is to blend the rich culinary traditions of Asian and island cuisine to create a dining experience that excites the senses and fosters a sense of community.
