Hi Alejandro, thank you so much for joining us today. We’re thrilled to learn more about your journey, values and what you are currently working on. Let’s start with an ice breaker: Would YOU hire you? Why or why not?
I definitely would. I don’t consider myself the most talented person on earth, but I do have passion, discipline, and loyalty. And I believe when you combine those three things, you can outperform talent any day of the week.
Can you briefly introduce yourself and share what makes you or your brand unique?
My name is Alejandro and I’m the head baker/owner of Mi Pan Bakery, my journey into baking started with a simple curiosity about sourdough. I was fascinated by how just flour, water, and time could come together to create something so flavorful and alive. What began as a hobby quickly turned into a passion, and that passion eventually grew into a full time business.
For me, bread is more than food, it’s connection. Each loaf carries a story of patience, care, and tradition. I love experimenting with seasonal ingredients and flavors that reflect where we are and who we are, but I also stay rooted in the classic methods that make sourdough so special
What makes Mi Pan unique isn’t just the bread, but the spirit behind it. I want people to feel warmth when they see us at the markets to slow down and enjoy something crafted with intention and good quality ingredients Right now, I’m especially excited about creating experiences, like sourdough workshops that give others a chance to be part of the process and share in the joy that baking has brought to my life.
Great, so let’s dive into your journey a bit more. Who taught you the most about work?
My father taught me the most about work. He was a hardworking and disciplined man, and I grew up watching his example. It didn’t matter if he was sick or tired he would still get up early, shower, and head out to work, even with a fever. He always told me, “No matter what you do in life, always try to be the best.” That lesson stuck with me, and it’s shaped the way I approach everything I do today.
What have been the defining wounds of your life—and how have you healed them?
The most defining wounds I carry are the deaths of my parents and the loss of my baby. There’s no simple cure for that kind of grief, and I no longer expect to be “fully healed.” What feels right to me is letting their memory shape my life my choices, and the way I show up. That ongoing remembering, rather than erasing the pain, is how I honor them.
Sure, so let’s go deeper into your values and how you think. What are the biggest lies your industry tells itself?
That bigger is better! That scaling up and mass production is the ultimate goal. But sometimes, the magic is in staying small and personal. Also, that old methods aren’t relevant. Yet, sourdough proves the opposite
Okay, so let’s keep going with one more question that means a lot to us: When do you feel most at peace?
Peace for me isn’t a place, it’s a person and a small room, my bedroom with my wife and our baby. Even surrounded by beautiful places, my heart always returns there. Those simple moments of togetherness are where I find true rest and joy.
