Good morning Paul, we’re so happy to have you here with us and we’d love to explore your story and how you think about life and legacy and so much more. So let’s start with a question we often ask: What is something outside of work that is bringing you joy lately?
May seem cliche but my 2 year old Grandson. As a Grandfather what other answer can there be?
Can you briefly introduce yourself and share what makes you or your brand unique?
I am a retired Air Force officer who used his exposure to international cuisines to create one of a kind Artisan Paella.
Amazing, so let’s take a moment to go back in time. Who taught you the most about work?
Absolutely no one! I produce a unique product that is 180 degrees out from the norms of traditional Paelleros. They are the product of 30 years plus of experimentation, trial & error.
When did you last change your mind about something important?
As an officer I trusted senior leadership within defense department, judiciary and law enforcement. When I retired from government service I realized they were no different from any politician.
I think our readers would appreciate hearing more about your values and what you think matters in life and career, etc. So our next question is along those lines. What would your closest friends say really matters to you?
Family. If anything else they are not actually very close.

Did not always know what was right but when I did I committed myself to it.
