Today we’d like to introduce you to Cala Rivas.
Thanks for sharing your story with us Cala. So, let’s start at the beginning and we can move on from there.
Reserved dining started because I was interested in spreading the history behind traditional Mexican cuisine and the culture of wine in my country.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
The road wasn’t easy, first because all my expirience in the kitchen has been only as a student and at 24 years people do not trust in you. They told me I can not have sufficient expirience. I have been studying master’s in Mexican cuisine so it was difficult and tired to start these two things together, fortunately, I have always had the support of my parents. If you are a young woman and have a dream, go for it, and always repeat in your mind that if you dream it, you can do it.
What should we know about Reserved dining? What do you do best? What sets you apart from the competition?
The project of Reserved Dinning is born from my passion for Mexican culture and especially for its traditional food and products. The project wants people to learn about the origins of the recipes that are somehow unknown even for mexicans. Some have been lost thru decades because They were not being created in the kitchens. For people who like wine, Reserved dining has a Sommelier who always does the best pairing. He is also de chef’s Father.
Do you have any advice for finding a mentor or networking in general? What has worked well for you?
I had two mentors, the first one was Silvia Kurczyn, She was the person who introduced me to the Mexican cuisine and the second was for pastries. She is my favorite pastry Chef , Chef Leticia Otamendi, who taught me always give the best of me in my dishes and also put all my love in anything I do. My advice to choose your mentor, it’s that both sides have admiration and respect.
