Today we’d like to introduce you to Brooke Shaeffer.
Hi Brooke, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Hi! I’m Brooke Shaeffer. I am 21 years old, born and raised in San Diego. I graduated in 2020 and, after high school, started at a community college studying child development. I realized that this was not the direction the Lord was calling me, and I had always loved the idea of starting my own business. Since I was a little girl, I’ve had a passion for baking. With some prayer and research, Bliss Cookie Cart was born! I bought my horse trailer in December 2021 and had my first event on April 6, 2022. It has been an amazing journey! It has grown me and taught me so much. I love baking and working with my amazing clients.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
When it comes to recipes and creating ice cream sandwiches, it has been easy. However, remodeling my trailer into the adorable cart it is now was a team effort. A family friend did the welding for me, and then my dad, boyfriend, and I handled the rest of the remodel. If it weren’t for them, I would have faced many more challenges. Probably my biggest struggle has been driving the trailer. I have grown a lot in the past couple of years, but it has been my biggest obstacle.

Bliss Cookie Cart is a gourmet ice cream cookie sandwich cart in San Diego. All cookies are homemade, and the ice cream sandwiches are made to order. You get to choose your favorite flavor combinations, and your sandwich will be made fresh. One thing I love about Bliss Cookie Cart is that you won’t find another dessert vendor like it in San Diego! It always bummed me out to see only cake or donuts at weddings. You deserve so much more! Bliss offers a special dessert experience. I absolutely love meeting so many amazing people at events and take pride in providing excellent customer service.

Bliss Cookie Cart is such a blessing in my life. I am so grateful to have this business. I truly could not do it without the Lord. My relationship with Christ has been pivotal in my business. As amazing as it is stressful things do happen and the Lord is my comfort and makes it all possible. I couldn’t end this interview without sharing how I do it. All glory be to God.
