Conversations with Luis Chacon

Today we’d like to introduce you to Luis Chacon. 

Hi Luis, so excited to have you on the platform. So, before we get into questions about your work life, maybe you can bring our readers up to speed on your story and how you got to where you are today.
My story starts with my grandparents, my mom’s dad also known as “TATA” was a fisherman so after his month-long trips, he would come back home with seafood galore. but in between that time my grandma and mom were always in the kitchen cooking something up. Many of my first memories was waking up to the smell of freshly brewed coffee and my grandma making chorizo con papa or eggs with tortillas on the side. My dad’s mom also known as “Abuelita” just had the magic touch when it came to food. Anything from tortas, posole, flan, and my favorite all-time dish was her cochinita pibil. So, my story starts with them but continues with my mom. Without my mom, I wouldn’t be who I am today in the kitchen. She freestyles food so there’s no measuring cups no exact formula. Her execution of flavor, patience, and plating the dish is what has me here today talking with you amazing people. 

We all face challenges, but looking back would you describe it as a relatively smooth road?
When it comes to food, I like to tell people it’s all trial and error. So, my road has definitely not been smooth but it’s been fun. I like to give the example of when I was little, I tried making scrambled eggs for my parents and in my head the eggs would scramble on their own but it would come out as an omelet and I ended up tossing 2 omelets before my mom saw me. that there’s two ways of cooking in my opinion One is cooking to feed yourself so you eat without the goal of flavor combinations but that you’re eating something. The second one is to cook with the main goal of creating something special. My mom had me start cooking for myself around the third grade, But I didn’t really start growing in the kitchen until after high school, when seasonings, paring of foods became my main goal. At the end of the day, cooking is all trial and error you will never know how to perfect something until you try it out. 

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
So, I currently post my food on Instagram in forms of reels, stories, or picture post. My proudest moment so far during this process has been partnering up with Evergood sausage, Thermo Pro, CavemanStyle, Stoke pizza, and more. I truly enjoy making food and hopefully inspire those who get the chance to watch. Also, get ready for Lets Gooo Cooking Catering. 

What do you think about happiness?
Waking up every day, at times we get so focused on making moves, becoming the person we have always wanted or buy that big ticket item but forget about the little things. Enjoying those moments with my family and friends is what truly makes me happy, and watching football on Sundays.
