Today we’d like to introduce you to Justin Ancheta.
Hi Justin, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
My name is Justin Ancheta, I attended Le Cordon Bleu culinary institute and have been a part of the food and beverage industry for 19 years. I have proudly held every position from dishwasher to executive chef in my career. After meeting my wife in 2018 Josephine, we decided to design, build and open SKRTCH KTCHN our Filipino-inspired sandwich food truck in 2020. We remained idle during the pandemic and did not officially begin our journey until March 2021. The cuisine is centered around traditional Filipino dishes broken down into philly-style sandwiches, tortas, burgers, or grilled cheeses. Our most popular sandwiches are the Lumpia Sliders and Kare Kare grilled cheese.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
Opening a business during the pandemic was a huge gamble. There was a lot of uncertainty in the early months of our journey. We managed to find a way to stay afloat by doing small private events and catering work. When we finally were open to the public in March 2021 it was a huge relief to finally see what we could do and what kind of mark we can make on the food truck scene.
Alright, so let’s switch gears a bit and talk business. What should we know?
SKRTCH KTCHN pronounced scratch kitchen is a culmination of thoughts and ideas I have gathered throughout my culinary career. It’s a bridge of two foods I love most, classic American-style sandwiches and authentic Filipino food and flavors. The idea of blending the two was very intriguing to me. There is approximately 80 menu ideas I have come up with over the decade and only have released 12 over the first year. The feedback we have received from our lumpia sliders and KARE KARE grilled cheese has been amazing and definitely a proud fulfilling moment to know we are on the right track. I feel what sets us apart is our uniqueness, there is nowhere in the world you can get bistek or chicken adobo in a Philly style sandwich. You can find us at local breweries and tap houses in National city like Hannegan’s house, over the tap, and Monthly at the SD Kollective food fest. What matters most to you? Why?
Family is everything to me, and to be able to provide for my family by doing something I love with all my heart is an absolute dream come true. That love is also represented by the food. Authentic, flavorful, and nostalgic.
