We’re looking forward to introducing you to Luis Chacon. Check out our conversation below.
Hi Luis, thank you so much for taking time out of your busy day to share your story, experiences and insights with our readers. Let’s jump right in with an interesting one: What is a normal day like for you right now?
A normal day for me right now looks like working my 9-5 during the day, then shifting gears into my food business in the evening. Whether it’s fulfilling orders, testing new recipes, or creating content, I’m usually in the kitchen or behind the camera once the workday ends. It’s a lot to juggle, but I really enjoy the mix—keeps things interesting and keeps me inspired.
Can you briefly introduce yourself and share what makes you or your brand unique?
Well my name is Luis , and I’m the person behind letsgooocooking —a passion-driven food brand that blends flavor, creativity, and culture. By day, I work a 9-5, but my true love is food. I run a small food business on the side where I get to cook, create content, and connect with people through what I make.
My main goal is to one day launch my own food truck, serving up delicious food while working closely with the San Diego community that raised me. More than anything, I want to make my family proud and build something meaningful that reflects who we are. Every dish I make and every step I take is with that dream in mind.
Okay, so here’s a deep one: Who saw you clearly before you could see yourself?
Definitely my parents. Watching them work full-time jobs while also building their own business showed me what hard work, sacrifice, and ambition really look like. Even before I fully saw my own potential, they did. They’ve always wanted more for me and pushed me to be great—not just in what I do, but in who I am. Their example and belief in me have been a huge part of what keeps me going.
When did you stop hiding your pain and start using it as power?
I stopped hiding my pain when I realized that being transparent online was so much more powerful than only showing my wins. Staying humble and allowing people to see my mistakes has not only made me more relatable, but it’s also helped me learn and grow so much faster. Sharing the real side—the lessons, the setbacks, and the growth—has turned my struggles into fuel for change.
Next, maybe we can discuss some of your foundational philosophies and views? What are the biggest lies your industry tells itself?
One of the biggest lies in the industry is that you have to create a super polished persona or stick to a super specific niche to be successful. While it can help with growth, it can also start to strip away who you really are. Over time, it’s easy to lose your voice and feel like you’re performing instead of just being yourself. At some point, it’s not you in front of the camera anymore—it’s a version you think people want to see. That disconnect can be exhausting. The truth is, authenticity resonates way more than perfection ever could.
Okay, so let’s keep going with one more question that means a lot to us: What is the story you hope people tell about you when you’re gone?
I hope the story people tell about me is that I was someone who was always willing to help, no matter what. Someone who showed up, who listened, and who cared—especially when times were tough. More than anything, I want to be remembered as a person who made others feel seen, supported, and valued.
