Today we’d like to introduce you to Cashay Williams.
Cashay, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
My humble beginnings started in my Nana’s Southern home in San Diego, CA. This lady is Pastor Tamasha Spears from Shreveport Louisiana… Her flavors came from whatever she had in the kitchen and they were outstanding! Me being the oldest grandchild, I was always in the kitchen watching and helping. I was intrigued, I respected the southern roots from which I came from.
I wanted to learn how to make Hot Water Cornbread, I want to know how long it took before you added your seasoning to your Pinto Beans so they would not harden… I also watched my mother Katrina (Collins) Boyette whip up the best Enchiladas, lay down the Lasagna just like an Italian authentic restaurant!
I became very diversified and could cook anything! It was not until my father Carl Collins graduated with his bachelor’s degree from Culinary Arts school that I started learning the science of food. Prior to that, he had always been the Pit Master. He could barbecue anything and anybody under the table! From that background and working in a few restaurants, I knew one day I wanted my own restaurant. Cooking and serving puts a smile on faces, and that is what I am about! My aunt Kalondra presented an opportunity for me to buy her restaurant equipment and start my own. Without hesitation my husband and I obtained the financing and got busy! The Fish Hut Market was born! It was awesome, I learned a lot, I gave a lot, I missed a lot, and I will never go back Lol!
By that, I mean I lost a lot of time with my young children, a lot of wear and tear on my mind and body that I can never get back. So, I decided that’s success is not more important than my health and time with my family. Oct. 2019, I sold the restaurant. As my husband always says… I just cannot keep still lol. November 2019 Southern Sauce 7 was born. My cousin Zshakira who had visited the restaurant had ordered a Crab Boil. She fell in love with the sauce. So, when I sold the restaurant, I continue to make the sauce for her, she is a singer-songwriter and actress. She made a post on social media and put the fire back under my feet. From there, I was up and running, acquiring license permits whatever was necessary to build this new company and brand. I also had friends who absolutely fell in love with the sauce promoted on Facebook without me even asking because they enjoyed the flavors so much! Farisha Wiley, her seven years old son could not remember the name of the sauce, so he calls it the Cashay’s Sauce lol. He puts it on Everything!!! And that is where I came up the slogan… but it goes on EVERYTHING!
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Making and creating homemade Soul food and Seafood recipes requires a lot of hands on deck. It is different when you are just grilling Frozen hamburger patties dropping frozen fries or chicken strips in the fryer, you do not need as many qualified employees. Finding qualified, skilled, manurable and consistent workers was one of my top three struggles. But I am thankful for the few I had!

Southern Sauce 7 was created by the people! I bowed out and they wanted an encore lol. It is hard for me to sit still anyway so I was with it! We specialize in the Cajun/ Creole Seafood Trays with 2 Amazing sauces.

If you had to go back in time and start over, would you have done anything differently?
When I started over, I told myself to simplify the menu. Offering too much on your menu is too much! Learn your strengths and stay in that lane. Do not try to run someone else’s race, you are not built for that and neither are they made for yours. Accept you, love you and be GREAT!
