Today we’d like to introduce you to David Bacco.

David Bacco Chocolatier is a Southern California-based purveyor of exclusive artisanal and hand-crafted chocolates. Exquisite purity and respect for hand-selected ingredients make them the ‘Grand-Cru’ (noble grade) of chocolate companies.

In 1994, David Bacco, the owner of David Bacco Chocolatier, Inc, began his serious culinary career in Lexington, KY. His vast knowledge and experience have come from studying under many chefs (Jonathon Lundy Lexington, KY, Eric Rupert Madison WI), in this country and abroad. David continued his education at the French Pastry School in Chicago. He learned advanced techniques with Belgian chocolatier, Jean-Pierre Wybau; advanced chocolate candies and candy bars sous vide with M.O.F. Chef Frank Kestener of France, chocolate showpieces and entremets with M.O. F. Stephen LeRoux, also from France.

In May of 2008, David opened his own high-end chocolate shop. In October 2010 he relocated to San Diego, CA to launch his new venture, David Bacco Chocolatier, Inc. David’s passion for the love of chocolate and his customers are apparent in every piece of chocolate he creates. Aspiring to design harmony, the essences of his chocolates combine the purest ingredients with shades of haute cuisine, exotic travel, and even your fondest childhood memories. From traditional to modern, these are the elements that reflect his desire to share his passion.

With more than 19 years of chocolate making experience and numerous major awards, David Bacco Chocolatier offers an assortment of chocolates for every occasion. And upholds direct and fair trade practices, support local and sustainable markets, using organic and non-GMO ingredients and packaging whenever possible, towards a more eco-conscious planet.

David Bacco Chocolatier is a Southern California-based purveyor of exclusive artisanal and hand-crafted chocolates. Exquisite purity and respect for hand-selected ingredients make them the ‘Grand-Cru’ (noble grade) of chocolate companies.

We create pleasurable Truffles, Pralines, Caramels and Dairy-Free (H2O) Water Truffles, focusing on Flavors and Textures. With flavors from Fresh Herbs, Flowers, Spices, Fruit and Nuts Crafted in Small Batches. Over 25 varieties of truffles, pralines, caramels and water truffle selections are available on their unique flavor wheel.

Some of David’s decadent and amazing creations are Incantato: A passion fruit caramel and milk chocolate ganache, Forté: Intense organic 74%, slightly acidic bittersweet truffle, Citral: The subtleness of lemongrass and 68% bittersweet chocolate.

Other flavors are; CEYLON (cinnamon), CANTARÉ (jasmine), TOSCANO (basil, lemon and olive oil), EUPHORIA (hazelnut), JOYEUX (lemon and ground almonds), and MONTSERRAT (Caribbean spices), single origin chocolate bars include; JADE 38% – FLEUR DE SEL: Milk Chocolate w/Smoked Sea Salt, PERU 68% – FORTUNATO No. 4: – Rarest Heirloom Organic Dark Chocolate, OLIVE et SEL 74% – Dominican Republic: Organic Dark Chocolate with Organic Olive Oil and Fleur de Sel (sea salt), (see website for more flavors and product descriptions).

Our Single Origin Chocolate Bars focus on the Exquisite Flavors and Nuances of the Cacao Beans sourced from the Best Countries Growing Cacao Trees. We are also One of the Exclusive Chocolatiers able to work with the Fortunato No. 4 Chocolate; an Heirloom White Cacao Bean of the Purest DNA strain. -This chocolate has been featured on Anthony Bourdain’s show “Parts Unknown”.

We also Feature European Style Drinking Chocolate – Thicker and Richer like a Liquid Chocolate Bar! They Are Dairy Free Mixes, with great versatility to work traditionally with water or with rice milk, almond milk, light milk to heavy cream, or spoon into your favorite coffee!

Let’s touch on your thoughts about our city – what do you like the most and least?
I like best about San Diego, is the consistent weather (great for chocolate production virtually year round), the many many beaches that one can visit.

The least thing I like would possibly be the traffic and traveling long distances to get anywhere.
