Meet Ken Lee of Malahat Spirits in Miramar

Today we’d like to introduce you to Ken Lee.

Ken, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
We are 3 longtime friends that have always pondered the idea of creating something special and unique. We were already making beer and wine at home and looked into the possibilities of creating spirits. After doing some investigating, we noticed a new craft spirit culture developing in other cities in the US. After going to several distilleries, we couldn’t believe that San Diego was lacking in this movement despite its flourishing beer culture. We wanted to bring the same level of experimentation and unique craftsmanship that the San Diego beer community brought to beer. We thought to ourselves that this could be the funniest thing we ever did. And it is.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
As with most startups in new industries, the road has had its challenges. Regulatory hurdles and distribution are always challenges in the spirits world. We are fortunate that our spirits have been highly praised for their quality and believe that will keep our growth continuing long term. We have to be proud of every drop and with that, we know we are on the right track.

So, as you know, we’re impressed with Malahat Spirits – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
As a startup, we do everything. How do you ask anyone to do anything you haven’t done yourself? It’s important to understand every aspect of the business no matter how small. We are proud of so many aspects of what we’ve created, especially the recipes for our spirits.

Months were spent perfecting every recipe. We distill every drop here at the distillery and use only real, natural ingredients. Real hand peeled ginger, real spices and every drop is distilled here at the distillery. We bring in our molasses and grains it’s all mashed, fermented, distilled, barreled, bottled, labeled right here in our distillery. The only way to ensure the quality is to control every step. This is why all of our spirits can be sipped neat if that is your preference. The awards are great, but the feedback from anyone who has tasted our spirits is equally as rewarding.

So, what’s next? Any big plans?
We’ll continue to remain focused on creating the best spirits possible. We love experimenting so there will be a few new surprises along the way. We look forward to continuing to grow our fan base.
