Manuel, please share your story with us. How did you get to where you are today?
Fit Tacos Meal Prep started as a passion project when I was a full time Personal Trainer. I understood that the majority of my clients had trouble achieving their fitness goals due to a lack of discipline in their nutrition. I wanted to be able to offer not only my clients but all of San Diego a means to eat a healthy meal while also enjoying something unique and delicious. That’s when we created the “Fit Taco”, a lower calorie, low carb taco. Lean cuts of protein on a jicama tortilla.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
There have been many struggles on this journey. I started Fit Tacos with a low budget which presented many challenges in the beginning. I had to train clients all day and Bartend nights in downtown San Diego to get to this point. It has not been a smooth road, but things worth having don’t come easy.
