Meet Nick Thomas of Spinning Meats Catering in North County

Today we’d like to introduce you to Nick Thomas.

Nick, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
To put it bluntly, it started because I love to cook. Growing up in a Greek family that’s not abnormal what was abnormal was my dad having a vertical rotisserie in our backyard. We would make gyros or shwarma for different family and friends parties. Soon enough it was “what else can you cook on that thing?”. I have cooked everything from lamb to thanksgiving turkey using the vertical rotisserie. Spinning Meats started at the Greek church I grew up at. Every year my father and I would volunteer to run the gyro booth at the yearly Greek festival. We had a reputation in the church as the gyro chefs. One year I decided to print business cards and hand them out while we volunteered. The very next day we had a few phone calls. Spinning Meats evolved when I walked into a brewery with some friends. The food truck was there serving tacos. My friend said, “you make way better al pastor than this”, I went up to the bar introduced myself and we booked a few dates right then and there. Ever since then word of mouth has taken us to other breweries, wineries, and events in San Diego County. We have been busy since 2016.

Has it been a smooth road?
Owning your own business is never a smooth road. I believe most small business struggles come from not knowing how to evolve. We learned (the hard way) what customers like, what they don’t like, what works and what doesn’t. Of course, we didn’t learn these things overnight, we spent money, put in the effort where it was not needed. I call those tuition payments. I live by a few rules when it comes to Spinning Meats 1) Customer service, 2) Quality products 3) Don’t be afraid to try something new or to say what we tried was wrong.

Tell us about your company. What do you do, what do you specialize in, what are you known for, etc. What are you most proud of as a company? What sets you apart from others?
My company is Spinning Meats Catering, we do full service casual catering specializing in Greek cuisine with a So-Cal twist. We are most known for our Gyros. Which is a combination of lamb and beef, slowly cooked on a vertical rotisserie, thinly sliced and then wrapped in warm pita bread with a cucumber garlic sauce and fresh veggies. It is a Greek street food that we have (in my opinion) perfected. What I’m most proud of as a company is being to see people enjoy food. Food brings people together, it unites and being part of that is something special. What sets us apart from others is our pride in what we serve and how we serve it. We don’t mail anything in we hand make all our sauces, cut all our veggies and treat every customer like they are our family over for dinner.

How do you think the industry will change over the next decade?
The food service industry has been around for 100’s of years. There are trends in the food service industry but what is always a constant is a quality product and quality customer service. We have fortunately nailed both! In San Diego with the big microbrewery seen I just see more collaboration between food and beer.
