
Today we’d like to introduce you to Paul Dimech.
Paul, can you briefly walk us through your story – how you started and how you got to where you are today.
Born in San Francisco to Maltese immigrants and served in the military for 28 years. While assigned to Europe I ran the bulls in Pamplona in ‘94 where I was first exposed to paella. Have been making it ever since but got the idea for San Diego Rice (highly decorated Artisan Paella) shortly after moving to San Diego in 2001. In 2017 started Paul’s Paellas.
Has it been a smooth road?
For the most part, smooth sailing although having bore the brunt of considerable criticism from paella traditionalist. Although somewhat annoying at times, I have found that a consistent commitment to excellence and improvement eventually overpowers all.
So, as you know, we’re impressed with Paul’s Paellas – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
I am a paella chef (Paellero) dedicated to reincarnating the innovation and cultural assimilation which is the very essence of original paella. I adhere to custom when it is best but will not shy away from new techniques or nontraditional ingredients made possible via the miracle of modern global logistics. The result is a paella made on-site with a taste second to none and an aesthetic matched by no one.
Let’s touch on your thoughts about our city – what do you like the most and least?
Came to San Diego while still serving in uniform and was immediately struck with how appreciative this city is towards those in the military (stark contrast to the city I was born in). Other than the cost of housing, I honestly cannot think of a single negative.
