Meet Sarah Franck of Health Unprocessed in Encinitas

Today we’d like to introduce you to Sarah Franck.

Sarah, can you briefly walk us through your story – how you started and how you got to where you are today.
I am a certified Nutritionist and Holistic Health Coach as well as an Organic Farmer based in the greater San Diego area. My original educational background is in Fashion Merchandising and Design and I also have an Elementary Education degree. It may seem that my path has taken many turns over the years but each of those deviations has led me to the perfect transition to where I am today. I could not be a successful certified Holistic Health Coach if I hadn’t first accomplished what I have in both my fashion and education careers. It all has led me here!

Health and wellness have always played an important role in my life but things got serious for me in 2008 when I was diagnosed with a hormonal auto-immune disorder with no cure. After spending a lot of time in and out of the doctor’s office, quickly losing hope, I decided to take my healing into my own hands. I was not interested in a lifelong prescription drug treatment that would aid in suppressing the symptoms but that never fully treat the cause of the auto-immune and help my body fight it. That’s when I transitioned into holistic medicine and began my journey to heal myself, by myself, by changing my diet, lifestyle, and exercise routine. After a couple long years of hard work, research, and dedication to myself, I healed. I have been free and clear of the auto-immune symptoms for over five years and now have dedicated a portion of my life to helping others do the same. In my Health Unprocessed practice, I work mainly with women suffering with similar hormone issues. Through some diet, lifestyle, and exercise shifts, we support the body in the healing process and my client come out on the other side, free and clear of their issues.

My husband and I also run a small organic farm in Encinitas, CA called Plant Beach Farm. We specialize in and are the headquarters for the young produce movement in southern California. Young produce is more advantageous than mature leafy greens for three reasons; 7 to 40 times more nutrition, more enzymes, and expandingly less cellulose. Cellulose in the form of your mature greens, such as spinach and kale, gets in the way of proper digestion, whereas young vegetation, such as baby greens, aids in digestion with its enzyme packed content. Most people aren’t aware of the potential dangers of moderate daily cellulose consumption. Another interesting fun fact regarding cellulose is that the daily recommended fiber intake decreases 20% once we hit the age of 50. Generally, people think it is the opposite. Too much fiber, like cellulose, actually leeches and depletes minerals like calcium from the digestive tract.

Everything we do at the Plant Beach Farm has a medicinal value. Our goal is to educate the local community on high quality products, organic produce, and important elements that support a healthy body. We run a farmstand that is open to the public six days a week so if I am not working with clients you can find me working the farm stand. We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
I don’t think starting any business is a “smooth road”. Every entrepreneur and business owner has their own struggles and issues getting things up and running and then plenty of issues along the way. Growing my health coaching practice has been an organic process for me over the years and has definitely taken a lot more time to grow than I thought it would. People have a hard time investing money in themselves and their health. They have no issues spending $800 on a new I-phone or Apple product but when it comes to shifting the quality of food they eat or investing in their personal health, they just don’t want to spend the money.

I try to educate people about the importance of what we put in our bodies and how we feel when we give our bodies what they need. If people would just make some little shifts along the way, adding in the really good stuff, they would feel the difference and it begins to make sense. I work on shifting that mentality with clients and customers but it is not always an easy sell. So many people live in a body that isn’t well and one that doesn’t feel well. They believe that this is normal, and it isn’t. Supporting them as they make the transition to a healthier version of themselves is the goal, but most people don’t want to make that shift until they have hit rock bottom, are fed up with modern medicine, or can no longer personally deal with their health issues. That is not always the easiest place to start from.

Tell us about your company. What do you do, what do you specialize in, what are you known for, etc. What are you most proud of as a company? What sets you apart from others?
My company is called Health Unprocessed. I currently run it as a sole proprietorship with hopes of growing and adding additional Health Coaches to my team in the future. I specialize in women’s hormones and mainly work with women who are suffering from Hashimoto’s, Poly-Cystic Ovarian Syndrome, Hypothyroidism, and Hyperthyroidism as well as infertility issues. I work to balance the body’s hormones through diet, lifestyle, and movement to support the body’s ability to heal.

I always tell people, the body was made to heal itself, by itself, if you give it what it needs. It is the most intricate computer system in the world and one that a lot of us fail to take care of. Watching my clients make shifts in their health and wellness in order to allow the body to go to work to heal, and then watching that healing happen is definitely the greatest accomplishment of this job. I provide my clients with the education and tools, they do the work, and the body heals. Doesn’t get much better than that!

What were you like growing up?
I was born and raised in Atlanta, GA. As a child, I was very outgoing, energetic, and active. I grew up swimming and competing as a competitive cheerleader. I enjoyed school and was motivated to get good grades and excel academically. I went to college at Georgia Southern University on the HOPE scholarship and then moved to New York City after graduation. I have lived in Georgia, New York City, New Jersey, North Carolina, and California.
