Meet Sylvia Padro

Today we’d like to introduce you to Sylvia Padro. 

Hi Sylvia, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstories.
Becoming a mom at 19 was the ultimate catalyst for my growth. I went through tough challenges over the years, but I preserved through every single one. My mother, who is my biggest supporter, has always been my role model. My mom, La Doctora, received her Doctorate degree at the age of 47. Nothing stopped her, and nothing was going to stop me either! I graduated with my Associates in 2016, decided to start my Bachelors May 2020 during quarantine (then found out I was pregnant a month and a half later), and I just started my Master’s program. All of this while being a mom, having a full-time job, maintaining a social life, maintaining a fitness & health routine, and running a small business. Ketolicious Bakery was born in 2019. I started the Keto diet in 2018 as a last resort because nothing seemed to work for me with weight loss. I was so afraid I couldn’t stick through it because I am a huge desserts and sweets person! I knew to be successful in my new lifestyle; I’d have to figure out options and not so much sacrifices. It was A LOT of trial and error! My family would joke with me and tell me I didn’t even know how to boil water. A lot of mixing salt with sugar, adding too much butter, cooking for too long… you get the idea. Finally, I found my groove. Baking became such a passion to me. I would bake just because creating new recipes, and Keto friendly eats was so exciting to me (and tasty.) I never thought to sell my desserts, but I received so many requests from friends and family I knew I had something special here. 

I decided to get out of my comfort zone and create an Instagram page dedicated to my journey and baked goods. I really do have to say my desserts may have brought me repeat customers, but it was my persona that brought them here in the first place! I loved the relationship I built with the Keto community. By me sharing my journey, I was able to reach so many wonderful people who turned customers and became forever friends. Sometimes life gets the best of me, and my creative juices stop flowing, but oh, when they do, my customers are always so eager to try. I couldn’t have done this without them. 

Ketolicious Bakery specializes in Keto cheesecakes, cupcakes, cookies, loafs, bagels, and much more. Sugar-free, low-carb, guilt-free! 

Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back, would you say it’s been easy or smooth in retrospect?
Overall, I’d say it’s been a pretty smooth road! The support I received through my baking career has been phenomenal. These days it has been a bit of a struggle to juggle working full-time, being a mom, going to school, and baking, and I’d say my biggest struggle right now is time management. 

Appreciate you sharing that. What else should we know about what you do?
At my 9-5, I’m a Clerk of the Court! I love my job. I work in the Criminal department, so it’s always interesting. I currently work the bail bond desk and assist attorneys as well with matters regarding cases they are appointed to. I’m most proud of how quickly I’ve picked up things in the short while I’ve been there. And I’m very proud of the connections I have made with coworkers now turned family. I’m not sure exactly what sets me apart from others, but one thing I’m told daily is how cute I’m always dressed, and I love knowing that! 

Risk-taking is a topic that people have widely differing views on – we’d love to hear your thoughts.
To me, risk-taking is listening to your intuition. The fear of the unknown when taking a chance at something new is honestly what stops most of us from making big decisions that have the ability to affect us in a positive way. Instead, we focus on the negative, the “what ifs.” 2019 was the beginning of my healing journey. Since then, I’ve taken a lot of risks I would have never imagined to do prior to that. I booked a trip to Europe, I quit my amazing paying job with a great title, I decided to return to school in the midst of the pandemic, I dyed my hair, I started dressing up at work, and got in touch with my femininity, I’ve let go of some people that were so important to me, and most valuable risk I’ve taken was deciding to make my healing a priority and kept choosing me, even when it was hard. Especially when it was hard.
