We recently had the chance to connect with Ricardo Oriente Mendes and have shared our conversation below.
Good morning Ricardo, we’re so happy to have you here with us and we’d love to explore your story and how you think about life and legacy and so much more. So let’s start with a question we often ask: What do the first 90 minutes of your day look like?
I usually start my day at 5am, wake up, get ready and go to the gym before work.
Can you briefly introduce yourself and share what makes you or your brand unique?
It’s always a pleasure to share a bit of my journey. My name is Ricardo Mendes. I’m a chef, entrepreneur, and founder of Hash Papas, a brand that brings a unique twist to breakfast through our signature dish: the Stuffed Hashbrowns. I graduated from culinary school in 2008 and completed an advanced culinary program in Chicago, and I’ve been working in the food industry for over 17 years now.
Hash Papas started as a creative idea inspired by the comfort of crispy potatoes and the diversity of flavors you can bring into a single bite. We’ve taken a classic breakfast staple and turned it into something craveable and innovative — kind of like a breakfast sandwich but with golden hashbrowns replacing the bread. It’s 100% gluten-free and packed with vegan, vegetarian, and meaty options, making it inclusive and exciting for all types of eaters. What makes it really special is how we cook everything to order using cast iron skillets — there’s a craft and care in each hashbrown that you can taste.
Over the years, we’ve built a strong following at farmers markets and pop-ups throughout San Diego. We’re currently working on expanding into a brick-and-mortar restaurant, which will be the next chapter of Hash Papas. I’m also passionate about building a business that supports local communities, collaborates with other makers and cafés, and creates joyful food experiences. Whether you’re vegan, gluten-free, or just a fan of bold flavors, Hash Papas is here to deliver something both familiar and completely different.
Okay, so here’s a deep one: What’s a moment that really shaped how you see the world?
One of the most transformative moments in my life was the first time I left my home country. Stepping out into the world on my own completely shifted how I saw everything. At first, it was exciting and overwhelming, but what struck me the most was realizing how connected we all are — despite differences in language, nationality, or culture.
Traveling and living abroad made me understand that, deep down, people everywhere share the same hopes, struggles, and joys. It taught me empathy, humility, and the importance of listening and learning from others. I was no longer just a chef from Brazil — I became someone who appreciated food as a universal language, a way to connect across borders.
Learning from other cultures has played a huge role in shaping my path, not just personally but creatively. It opened my mind, influenced how I cook, and reminded me that diversity and inclusion are strengths — in life and in the kitchen
If you could say one kind thing to your younger self, what would it be?
I would tell my younger self: Don’t be afraid. Life has a way of unfolding the way it’s meant to — the good and the bad are both part of the journey. What’s meant for you will come, sometimes in ways you never expected. Just keep believing, have faith in yourself, and always give your best. Even when things feel uncertain or overwhelming, trust that every step is shaping who you’re becoming.
Sure, so let’s go deeper into your values and how you think. What would your closest friends say really matters to you?
My closest friends would probably say that what matters most to me is staying true to who I am — valuing friendship, family, and never giving up on my dreams. I’ve always believed that if you have something you love and believe in, you have to fight for it, no matter how long it takes. I think they’d also say I’m someone who shows up for the people I care about and puts passion and purpose into everything I do.
Okay, so let’s keep going with one more question that means a lot to us: When do you feel most at peace?
I feel most at peace at the end of the day, when I finally lay down and take a moment to reflect. That quiet moment when I look back and feel proud knowing I gave my best — even if the day wasn’t perfect — brings me a deep sense of calm. It’s that feeling of accomplishment, of progress, and the hope that tomorrow is another chance to grow, improve, and keep moving forward. That’s when I feel centered.
