Rising Stars: Meet Lindsay Cooper of Point Loma

Today we’d like to introduce you to Lindsay Cooper.

Hi Lindsay, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
Cookies have been a part of my life since my early childhood. With a challenging childhood, I focused heavily on my independence.. at the ripe old age of 8, when I found a sugar cookie recipe in the Yellow Page’s Cookbook that came with the telephone book back in 99. From cookie discs to biscuits, I had a huge array of trial and error. But the thing I experienced the most was a continued love for making realllly good cookies. I mean, what kid doesnt love cookies.

Eventually, my quest for independence led me on a journey with the Unites States Navy, as an Aviation Boatswain’s Mate: Equipment (ABE), where I learned the importance of attention to detail and gained an enormous amount of determination. During that time, I traveled all over the world and took part in several meaningful operations. Including Operation Tomodachi, where I suffered radiation exposure and ultimately a traumatic brain injury, thus ending my military career. So I decided to take everything I had learned in the navy, my passions through expressive love through baking, and my determination with school and take the next step. While in school for accounting and finance in 2014, I developed a cookie brand which ultimately evolved into Baked Thicc! Shortly after graduation, I decided to say “screw it” and went full steam into one of the biggest goals I had created for myself. Ever since then, I’ve realized the importance of believing in yourself when it comes to achieving any goal you have.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Business ownership is never a smooth road. Just like any small business, especially one that started as a Cottage Food Organization, we’ve had our struggles. I’ve been lucky enough to have built a huge understanding of the bookkeeping and admin side of business, but I was never prepared for the stresses that come with the expectations you set on yourself as a business owner. We’re currently trying our best to navigate the current inflation rates with the egg shortages – which was never something I thought I’d be stressed about! Eggs! of all things!

Can you tell our readers more about what you do and what you think sets you apart from others?
Professionally, I make cookies! I also handmake all of our Vanilla pastes and extracts that get put into our cookies. We source our vanilla beans and chocolate from sustainable farms and aim to make our cookies with ethics and quality in mind. Aside from us being known for our supportive business ethics, we’re known as san diegos original stuffed cookie! Aside from the OG favorites, we stuff our cookies with goodies such as curds, brownies, ganaches, caramels, and other super yummy confections! Thicc isn’t just a playful term at the bakery, it’s a whole way of life.

Can you tell us more about what you were like growing up?
Life was hard to put it simply. I had to depend on myself a lot more than I probably should have, which led me to finding more “adult” like interests. Interests such as baking, cooking, organizing. I was extremely strong and independent at such a young age, I’ve always been focused on progressing the next part of my life – which led me to joining the Navy and giving myself a better/different option than what was given to me at the time.
