Meet Elisa and Michele Borelli of Soleluna

Today we’d like to introduce you to Elisa and Michele Borelli.

Elisa and Michele, can you briefly walk us through your story – how you started and how you got to where you are today.
The story behind where Michele and I are today is one full of unexpected twists and turns, highs and lows that we would not trade for the world. We decided to move to the United States to join the rest of our family that had been living here and leave behind our secure jobs in the financial industry in Italy about 4 years ago. When we arrived, we rolled up our sleeves and got to work immediately, trying to build what has now become our American dream.

Michele started working at Soleluna as a waiter, understanding the need to work his way up from the bottom, learning English, and sacrificing a whole lot of time away from his wife and kids to learn everything there is to learn about this industry. His vision for his future kept expanding with restaurant ownership being at the very center of it, and with the hope and dream to create a legacy for his kids.

As fate would have it, the opportunity to take over ownership of Soleluna Cafe came our way about a year ago. We never hesitated. No matter the size of the challenge ahead of us, and the never ending amounts of obstacles we had to overcome to complete the purchase and establish ourselves as the new owners, we knew this was our next step. So, in complete faith, we took a huge leap. We have learned so much, we are continuously striving to grow, succeed, and complete the mission to bring real authentic Italian food to the local San Diego community. We know there is always room to grow and improve so we feel like we will never “arrive”, rather our goal is to continue to work diligently to refine our craft. In the meantime, we love what we get to do, every day is a new opportunity to serve our community through simple authentic food.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
There have been a lot of obstacles and challenges along the way. The establishment of the new ownership, learning the balance between maintaining congruency between the prior owners and our own fresh new touch was definitely a challenge. Additionally, learning to cater to our customers and their likes and dislikes while maintaining the authenticity of our homeland’s cooking style has been a craft we are continuing to strive to improve.

Please tell us about Soleluna.
We are a family owned restaurant through and through and we are very proud of that. We specialize in authentic Italian food and have a strong commitment to maintaining original homemade recipes from Italy. We come from Emilia Romagna, a region of Italy known for Parmesan cheese, balsamic vinegar and prosciutto and other cold cuts.

We are most proud of our commitment to developing and crafting authentic recipes that are true to our homeland but also cater to the preferences of local families.
