Meet David & Sandra Mejia of Nibble Chocolate in Factory

Today we’d like to introduce you to David & Sandra Mejia.

David & Sandra, please share your story with us. How did you get to where you are today?
Everything began when we realized we could actually make chocolate from scratch and control the entire process. This meant we could provide a chocolate that was transparent, simple, natural, healthy, sustainable, everything that we would and were already looking for in the products we purchase. We fell in love with the craft, the delicious flavor of the chocolate, and the initiative behind it.

We began selling at the farmer’s markets, then online, then opened our small shop in Old Town and finally started selling to wholesale accounts. We are passionate about our chocolate and making a difference.

Has it been a smooth road?
We have had many smooth times as well as challenges. The process of making chocolate is on its own very challenging. For example, the winnowing was particularly difficult, definitely got better when we were able to afford a winnowing machine. Before that, it was a very manual process using a homemade winnowing machine.

Another challenge has been educating customers about the nature of our product. The chocolate industry has a very different perception (not good for you, bad ingredients, candy category, child labor…) and for us to enter the market we have to provide a lot of information and explain in detail.

So, as you know, we’re impressed with Nibble Chocolate – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
We are craft chocolate makers. Our process starts with organic and sustainable single origin cocoa beans. We try to keep the natural flavors of each origin intact by only adding sugar to our chocolate, nothing else. We also try to maintain a high cocoa percentage to promote a healthy lifestyle and take advantage of the health benefits of cocoa.

We are proud to make a difference in the industry by sourcing ethically and by not hurting any animals in the process by being fully vegan.

Let’s touch on your thoughts about our city – what do you like the most and least?
San Diego is a dream come true. We love everything about it: the ocean, the uniqueness of each neighborhood, the nice and chill people, the topography, the cleanliness. Everything really. There is nothing we dislike.

Driving up or down a mountain and being able to see the ocean is one of our favorites. The atmosphere at the beach is also so amazing, there is a good vibe, everyone is enjoying it. Love being able to go for walks or hang out at the beach.

Everything is beautiful and organized and clean. It’s a paradise. The people here is also so nice and polite, always trying to help, always positive.
