Today we’d like to introduce you to Paulette Ochoa.

Paulette, we appreciate you taking the time to share your story with us today. Where does your story begin?
Since I was a little girl, I always dreamed of having a coffee shop. I didn’t even drink coffee back then, but I loved watching my mom and my aunts gather around a cup and turn it into a moment, a pause, a conversation, a connection. Something about that felt so special to me, and the idea of creating a space like that never left my mind. (.. and still)
In 2019, I even started planning a café with a friend, but life took us in different directions and it didn’t happen. Still, the dream stayed. Fast-forward to this year, I was feeling overwhelmed in my job and I knew deep down that the corporate world wasn’t where I saw myself long-term. When I finally made the decision to leave, I asked myself: Okay, what now? What do you truly want to build? And the answer was the same as when I was little: I wanted coffee, community, and connection.

I didn’t yet have the capital to open a storefront, so I started thinking differently: How can I begin with what I have? That’s how the idea of a specialty coffee cart for events was born. I took a course while I was still working, started getting advice from people in the industry, and little by little, Almante began to take shape.

With the help of my husband, we created what today is the heart and DNA of Almante Café. A project built with intention, warmth, and the belief that a cup of coffee can bring people together. His support played a huge role in turning this dream into something real and grounded.

Where I am today is the result of trusting my intuition, starting before everything was ‘perfect,’ and staying close to the feeling that started it all, creating moments for people through something as simple and meaningful as a cup of coffee.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
t definitely hasn’t been a smooth road. We’ve only been in business for a couple of months, and we know there’s still a long journey ahead before more people get to know us. From day one, nothing was easy. When I first started dreaming up the idea, I went ‘all in’, I booked big events even before having my espresso machine, thinking it would be something I could pick up in a day or two. I had no idea it would take weeks, sometimes months, for equipment to arrive.

Our machine ended up arriving just two weeks before our first scheduled event, and that’s when everything truly started. It was stressful, but it taught me that every project has its timing.

Right now, our biggest challenge and our biggest goal is the same: reaching more people. We’re still growing, still learning, and still working every day to build visibility and trust. But every setback has made us more resilient, and every person who tries our coffee reminds us why we keep going.

Almante Café is a specialty coffee experience designed for events, but more than that, it’s a brand built around moments of connection. We specialize in high-quality espresso drinks made with intention, simplicity, and a clean aesthetic that elevates any gathering. Our goal is to bring a warm, curated café experience directly to people, whether it’s a private event, a celebration, or a community moment.

What sets us apart is the heart behind what we do. Every detail, from the organic homemade syrups to the minimal, thoughtful setup, is created to feel personal and memorable. Almante isn’t just about serving coffee; it’s about creating a feeling. A pause. A moment people remember.

I’m really proud of the love we’ve received in such a short time. Even though we’re still growing, the feedback from people who’ve tried our coffee tells us we’re on the right path.

If you had to, what characteristic of yours would you give the most credit to?
I believe one of the most important qualities for success is being intentional with every detail. For us, choosing the highest quality ingredients and supplies for our coffee cart. From our Mexican beans, to our home made syrups. That commitment to quality and always having a smile for our customers is what makes our service feel truly essencial,
