Today we’d like to introduce you to Bill Sysak.
Wild Barrel Brewing Company was opened on September 30th, 2017. It was founded by the 3 friends; Bill Sysak (“Dr.” Bill”), Bill Sobieski and Chris White and has quickly become one of the premier Craft breweries in San Diego County. “Dr.” Bill is considered one of the foremost craft beer experts in the country with over 40 years experience. He most recently served as the craft beer ambassador at Stone Brewing Company. Bill Sobieski was an award-winning home brewer with over 25 years of experience and Chris White although newer to craft beer is a successful businessman and entrepreneur with a passion for craft beer that matches his partners. Wild Barrel’s headquarters, production facility and initial tasting room, is a 10,000 square feet location in San Marcos.
Wild Barrel hyper-focused on creating quality craft beers with a great customer experience. With a selection of classic San Diego style IPA’s, North East hazy IPA’s, Berliner Weisse style kettle sours known as San Diego Vice’s and a range of stouts always on tap. They have started a barrel program that will produce sour beers aged in wine barrels and Imperial stouts aged in spirit barrels that will be ready by late 2018.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
With our team’s experience going in and the edition of Preston Weesner to head our barrel program we haven’t had too many surprises, but I think it is pretty universal that startup breweries almost never have as much capitol, equipment and manpower as they end up needing.
Wild Barrel Brewing Company – what should we know? What do you guys do best? What sets you apart from the competition?
Quality, quality, quality! You can’t brew great beer without being willing to dump beer that doesn’t meet your standards. If a beer doesn’t turn out the way you want it to, don’t call it something else, dump it and don’t throw it a barrel and hope something magical will happen to it, it won’t.
What moment in your career do you look back most fondly on?
Opening Wild Barrel.
