Meet Brianna Gillin of Grub Burger Bar

Today we’d like to introduce you to Brianna Gillin.

Brianna, can you briefly walk us through your story – how you started and how you got to where you are today.
A resolute Jersey girl who graduated with a degree in Psychology from Montclair State University decided to move to sunny San Diego to see what the West Coast had to offer. It was there where my passion for hospitality led me to La Valencia Hotel, Beaumont’s Eatery, & Craft and Commerce where I gained experience and a strong network of fellow operators & friends. I believe becoming a leader in Hospitality takes a passion for developing motivated people and a daily commitment to extraordinary food & service. It may seem like a common story where one starts at the bottom and works hard to become an owner but I am proud of the journey to becoming the leader at a funky little burger joint called Grub Burger Bar.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
We all come across a few bumps but nothing that I couldn’t overcome with the help of family and friends. My experience playing Lacrosse taught me that life is a series of cuts – it’s all about making choices, changes of speed, and changes of direction. When we stop moving and stand still, progress is stalled and we can’t protect the ball.

Grub Burger Bar is a fast-casual restaurant offering eclectic burgers, fresh salads, cutting-edge shakes and crafted cocktails. Everything is made in-house, from our Shiner beer battered onion rings to scratch-made dressings and burger buns baked fresh throughout the day. With unique burgers like The Guacapotle and The Hot Chick fried chicken sandwich, our high energy, chef-driven burger bar features scratch-made creations and unmatched hospitality. We believe in the space between… when you’re not so busy DOING that you have time for small moments and dreaming big.

What were you like growing up?
Sporty, curious, & a youthful fear of the ocean.
