Hidden Gems: Meet Alberto Battaglini of Ice thieves / pony cocktails + kitchen

Today we’d like to introduce you to Alberto Battaglini

Hi Alberto, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
From a young age, my fascination with food was unmistakable. Growing up in a household where the kitchen was the heart of the home, I was captivated by the rhythm of cooking—the chopping, stirring, and plating
By teenage years, the dream had matured into action. I enrolled in a local culinary school and absorbed the technical skills required to excel in professional kitchens. Knife skills, classical French/italian sauces, and the delicate art of pastry became second nature. Here, discipline and a respect for the craft, created a foundation for what was to come.
While my peers focused solely on the culinary aspect, l began to notice the interplay between food and beverages. Watching sommeliers and bartenders harmonize drinks with meals piqued my curiosity. This fascination was solidified during an internship at a fine dining restaurant, where a mentor introduced me to the history and complexity of cocktails.
After several years working as a line chef, I really began to feel the pull of mixology. The decision wasn’t easy; leaving behind the structured path of a chef meant venturing into uncharted territory. However, the idea of crafting experiences through cocktails, with their blend of artistry and chemistry, was irresistible.
Embracing new direction, i immersed in the study of spirits. I trained under renowned mixologists and explored the nuances of balance and flavor. Soon, crafting cocktails became a way to tell stories—infusing each drink with a narrative inspired by history, culture, or personal experience.
To deepen my craft, i set out on a journey around the world. From Italy to Mexico, Spain, Brazil, England and more i explored how culture shaped cocktails. Every country added another layer to their understanding of how flavors transcend borders.
The culinary background proved invaluable as i innovated new cocktail recipes. Drawing on my knowledge of spices, fermentation, and seasonal ingredients, i created drinks that were not only delicious but deeply rooted in the culinary traditions of the places they had visited. I became known for bridging the gap between kitchen and bar.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Arriving in a new country without fluency in its language was both humbling and isolating. Simple tasks, like ordering food or asking for directions, became overwhelming challenges. Conversations that once seemed effortless now felt like deciphering an impossible code. Misunderstandings were frequent, and the inability to fully express myself weighed heavily. Yet, amidst the frustration, I clung to the belief that learning the language was the key to unlocking new opportunities.

The learning process was grueling. Balancing work and language classes required relentless effort. Early mornings were spent practicing pronunciation, while evenings were dedicated to studying grammar and vocabulary. There were countless moments of self-doubt—times when I questioned whether I would ever feel confident speaking. Yet, small victories, like understanding a conversation or receiving a genuine smile for my effort, reignited my determination. Slowly, I began to find my voice.

Mastering the language became more than a skill; it was a lifeline to belonging. With every new word and phrase, I felt a deeper connection to the people and culture around me. Challenges remained, but the journey taught me resilience and the value of perseverance. Today, as I reflect on those struggles, I’m reminded of how far I’ve come—not just in speaking a new language, but in building a life that once seemed out of reach.
